Pickled Broccoli

My mom makes the best broccoli salad with raw broccoli, red pepper flakes, vinegar, salt, and olive oil. It’s a simple, but it’s a delicious combination, and it’s such a nice and refreshing dish. I thought it would be fun to turn that into a pickle with the same bright, crunchy goodness. These pickles would be a perfect addition to a sandwich, or even just as a nack on its own.

  1. Cut broccoli into small pieces

  2. Slice 2 cloves of garlic

  3. Add the broccoli and garlic to a mason jar with 1 teaspoon of red pepper flakes

  4. Make the brine combine (1/2 cup) water, (2 tablespoons) salt, (1/2 cup) vinegar, and (1/2 tablespoon) sugar in a sauce pan and heat to a boil. Remove from heat and let cool

  5. Pour the brine over broccoli

  6. Seal the jar

  7. Let set in the fridge for a few days

  8. Enjoy!
