Pickled Parsnip

Parsnips! For some reason parsnips make me think of the movie Wallis and Gromit (a great movie that I highly recommend watching). Something about the pallid look of the movie’s animation style evokes the image of a parsnip in my mind. Anyways, that’s not particularly relevant. Seeing as a parsnip looks strikingly similar to a rutabaga and had the taste of a carrot, I decided to use the same seasonings as the rutabaga. I added some cumin, paprika, and cayenne.
