Pickled Watermelon Rind

Ingredients:

Watermelon rind

2/3 cup of water

2/3 cup of white vinegar

A teaspoon of peppercorns

1.5 tablespoons of sugar

1 tablespoon of salt

Jalapeño

Steps:

  1. Slice the skin off of the watermelon rind and dice into smaller pieces

  2. Slice a jalapeño in half

  3. Place into watermelon rind and jalapeño into a glass jar

  4. Heat the water, vinegar, peppercorns, salt, and sugar in a saucepan

  5. Mix until the sugar and salt are dissolved

  6. Heat until slightly boiling

  7. Remove from heat and let rest for a few minutes

  8. Pour over jalepeño and watermelon rind

  9. Let cool down some more then cover and refrigerate

  10. Enjoy!
