Pickling Asian Pear
Ingredients:
1 mason 16oz jar
Asian pear diced into medium sized cubes
1/2 cup of water
1/2 cup of distilled white vinegar
1/2 cup of sugar
A teaspoon of salt
1 Lemon
1 stick of cinnamon
2 Star anise
Directions:
Zest the lemon to get 2 teaspoons of lemon zest
Squeeze out a tablespoon of lemon juice and put it to the side
Medium dice an asian pear
Add the pear, lemon juice, lemon zest, a stick of cinnamon and the star anise to the mason jar
Into a pot, add the water, white vinegar, sugar, and salt
Put the pot on the stove
Heat and stir until all the sugar is dissolved
Once the liquid is boiling and add a cover to the pot for a few minutes
Turn turn off the heat and uncover the pot
Let the liquid cool for a few minutes and pour into the mason jar and close
Refrigerate and try after a few days!

These pickles tasted delicious. They reminded me of eating a pie. I think this would taste very good with cakes and ice cream.
I left the pickles in the refrigerator for 5 days before eating them and they still maintained a very nice crunch. I would 10/10 make these again.
