Pickling Strawberries

Ingredients:

1 mason 16oz jar

Strawberries

1/2 cup of water

1/2 cup of distilled white vinegar

1/2 tablespoon of honey

1/2 tablespoon of sugar

Chopped mint

Sliced ginger

2 teaspoons of black pepper corn


Directions:

  1. Cut the strawberries into fourths

  2. Roughly chop the basil

  3. Use a potato peeler to slice the ginger

  4. Add the strawberries, ginger, mint, and a pinch of sugar to the jar

  5. Into a pot, add the water, white vinegar, sugar, honey, and black peppercorn

  6. Put the pot on the stove

  7. Heat and stir until the sugar and honey are dissolved

  8. Heat until boiling for a couple minutes

  9. Turn turn off the heat

  10. Let the liquid cool for a few minutes and pour into the mason jar and close

  11. Refrigerate and try after a few days or weeks!


Review: I was worried that these pickles would be overly sour like the orange pickles I made a different time. However, that was not the case at all. The strawberries still had some sweetness to them and worked well with a salad, and I also think that it would be delicious with some cheese and crackers.
