Pickling Strawberries
Ingredients:
1 mason 16oz jar
Strawberries
1/2 cup of water
1/2 cup of distilled white vinegar
1/2 tablespoon of honey
1/2 tablespoon of sugar
Chopped mint
Sliced ginger
2 teaspoons of black pepper corn
Directions:
Cut the strawberries into fourths
Roughly chop the basil
Use a potato peeler to slice the ginger
Add the strawberries, ginger, mint, and a pinch of sugar to the jar
Into a pot, add the water, white vinegar, sugar, honey, and black peppercorn
Put the pot on the stove
Heat and stir until the sugar and honey are dissolved
Heat until boiling for a couple minutes
Turn turn off the heat
Let the liquid cool for a few minutes and pour into the mason jar and close
Refrigerate and try after a few days or weeks!
Review: I was worried that these pickles would be overly sour like the orange pickles I made a different time. However, that was not the case at all. The strawberries still had some sweetness to them and worked well with a salad, and I also think that it would be delicious with some cheese and crackers.
