Pickling Cauliflower

Ingredients:

1 mason 16oz jar

Cauliflower

1/2 cup of water

1/2 cup of distilled white vinegar

1/2 tablespoon of salt

1/2 tablespoon of sugar

1.5 teaspoons of red pepper flakes

2 cloves of garlic

1/2 teaspoon of turmeric

Thyme

Rosemary

2 teaspoons of black pepper corn


Directions:

  1. Cut the cauliflower into small pieces

  2. Add the turmeric and cauliflower to a jar and mix

  3. Slice the garlic

  4. Chop some rosemary

  5. Add the red pepper flakes, garlic, a few sprigs of thyme, rosemary to a jar, and a pinch of salt

  6. Into a pot, add the water, white vinegar, sugar, black peppercorn and salt

  7. Put the pot on the stove

  8. Heat and stir until the sugar and salt dissolved

  9. Heat until boiling for a couple minutes

  10. Turn turn off the heat

  11. Let the liquid cool for a few minutes and pour into the mason jar and close

  12. Refrigerate and try after a few days or weeks!


Review: The turmeric added a nice, earthy flavor to the pickles and helped to mellow out the acidity from the vinegar. The garlic added a good flavor to the pickles. I recommend eating these pickles in a sandwich with roast beef.
